Willem Hiele, raised in a fishing family in Oostende and Koksijde, has a deep connection with the sea. His passion for surfing took him to the most beautiful coastal spots worldwide, further strengthening his love for the ocean. With a background as a baker, he developed a unique terroir cuisine that is both complex and simple. His focus is on sustainability, collaborating with local farmers and exclusively using the daily catch.
Through a ‘nose-to-tail‘ approach and striving for zero waste, he shows respect for both nature and community. His eponymous restaurant, located in the polder region near Oostende, cooks to the rhythm of the sea and is inspired by the unpredictability of nature and the rich offerings of local producers.
