Michiel has always carried the sea and its treasures in his heart. His love for local products and fresh fish started early and grew into a true passion. After gaining experience at Villa Maritza, Ostend Queen, and during internships abroad, Michiel decided to open restaurant STORM with his wife Nathalie in 2018 on Oosteroever.
Located near the Ostend fish market, where fishing boats dock daily, Michiel brings the freshest fish literally from the boat to his kitchen. His philosophy? Let the simplicity of the product speak for itself, without frills. He is especially a fan of “the fish that remains after everyone else has chosen” – a nod to his creativity and respect for lesser-known species.
